In case you’ve gone ahead and recycled the carton your roast came in, here are the cooking instructions for our holiday roasts! For the Celebration Roast 1 lb, follow the 2 lb instructions, but it will take less time. If it’s an emergency thawing situation…we suggest putting the roast (with packaging on) in a gallon ziplock bag and plunging it in water, refreshing it periodically to thaw faster.
Celebration Roast with Traditional Bread Stuffing Instructions:
Thaw in refrigerator for 12 hours or overnight. Use within 7 days of thawing, OK to refreeze.
Oven: Preheat to 350°F. Coat a large roasting pan with 2 tablespoons oil and toss with 1 onion (quartered), 1 lb potatoes, 3 carrots and 3 celery ribs all cut into bite-sized pieces. Add 2 tablespoons water to the pan. Season vegetables with salt and pepper. Remove plastic wrapping from roast and coat with 1 tablespoon of oil and place on top of vegetables. Cover pan tightly with foil or a lid. Bake for 45 minutes. Remove cover, increase the oven to 400°F and bake 15 additional minutes until roast is heated through and vegetables are browned. Avoid overcooking.
Microwave: Slice roast thinly and fan out on microwave-safe plate. Microwave on high in 30 second intervals for each two slice serving until warmed. Avoid overcooking.
Porcini Mushroom Gravy
Stove Top: Add contents of gravy packet and 2 cups water to medium-sized saucepan. Cook while stirring on medium-high heat until gravy thickens (about 4 minutes). Add a splash of red wine, thinly sliced mushrooms, freshly ground black pepper or chopped fresh herbs to make it your own!
Microwave: Add contents of gravy packet and 2 cups water to large microwave-safe bowl. Cook on high heat for 1 minute at a time, stirring at 1 minute intervals until gravy thickens (about 4 minutes).
