Your go-to guide for a Field Roast Thanksgiving feast!

In case you’ve gone ahead and recycled the carton your roast came in, here are the cooking instructions for our holiday roasts!  For the Celebration Roast 1 lb, follow the 2 lb instructions, but it will take less time.  If it’s an emergency thawing situation…we suggest putting the roast (with packaging on) in a gallon ziplock bag and plunging it in water, refreshing it periodically to thaw faster.

Celebration Roast with Traditional Bread Stuffing Instructions:

Thaw in refrigerator for 12 hours or overnight. Use within 7 days of thawing, OK to refreeze.

OCB2 stuffing ingredientsven: Preheat to 350°F. Coat a large roasting pan with 2 tablespoons oil and toss with 1 onion (quartered), 1 lb potatoes, 3 carrots and 3 celery ribs all cut into bite-sized pieces. Add 2 tablespoons water to the pan. Season vegetables with salt and pepper. Remove plastic wrapping from roast and coat with 1 tablespoon of oil and place on top of vegetables. Cover pan tightly with foil or a lid. Bake for 45 minutes. Remove cover, increase the oven to 400°F and bake 15 additional minutes until roast is heated through and vegetables are browned. Avoid overcooking.

Microwave: Slice roast thinly and fan out on microwave-safe plate. Microwave on high in 30 second intervals for each two slice serving until warmed. Avoid overcooking.

Porcini Mushroom Gravy
Stove Top: Add contents of gravy packet and 2 cups water to medium-sized saucepan. Cook while stirring on medium-high heat until gravy thickens (about 4 minutes).  Add a splash of red wine, thinly sliced mushrooms, freshly ground black pepper or chopped fresh herbs to make it your own!
Microwave: Add contents of gravy packet and 2 cups water to large microwave-safe bowl. Cook on high heat for 1 minute at a time, stirring at 1 minute intervals until gravy thickens (about 4 minutes).

 

Smokey Forager’s Roast with Pineapple Mustard Glaze Instructions:

Thaw in refrigerator for 12 hours or overnight. Use within 7 days of thawing, OK to refreeze.
Oven:  Preheat oven to 350°F.  Remove plastic and place roast in oiled baking dish.  Coat roast with 1 tablespoon oil and add 2 tablespoons water to baking dish.  Cover with lid or foil and bake for 45 minutes.  Open glaze packet and pour onto roast. Using pastry brush, coat surface of roast evenly. Bake additional 10-15 minutes uncovered until glaze is lightly browned.  Avoid overcooking.
Microwave:
Slice roast and brush each slice with glaze. Heat for 30 seconds per slice.  Avoid overcooking.

 

 

 

 

Stuffed Hazelnut Cranberry Roast en Croute Instructions:

HCR stuffing ingredientsOven or Toaster Oven:

Thaw for 12 hours or overnight in the refrigerator.  Preheat oven to 400°F.
Remove the plastic packaging and place the roast on a sheet pan in the center of the oven – reshape pastry if needed.  Bake for 1 hour 10 minutes until internal temp is 160°F and pastry is golden brown.  Let cool for 15 minutes. Cut into slices and serve.
Serve with delicious gravy, cranberry relish and lots of good vibes!
To add colorful garnish to your presentation, roast a variety of your favorite seasonal vegetables – such as potatoes, parsnips, carrots, onions and squash. Cut into chunks, toss in olive oil, and season with salt and pepper. Add fresh garlic, a sprig of rosemary, and bake in the oven for about 1 hour 10 minutes. Arrange on a platter with the Hazelnut Cranberry Roast En Croute.
