East Asian Wild Mushroom Field Roast Salad

The Pacific Rim flavors of lime, sesame oil, garlic and cilantro will have you returning to this classic Field Roast salad recipe.

Ingredients

1 Field Roast Wild Mushroom Quarter Loaves, julienned
1 lb Soba noodles, cooked, cooled and drained
1 Bell peppers, julienned
1 bunch Scallions, sliced
1 Jalapeno, seeded and minced
1/2 bunch Cilantro, fresh chopped on the bias

Dressing:
1/2 cup Tamari
1 Lime, zested and juiced
1/3 cup Safflower oil
2 TBS Sesame oil
1 TBS Garlic, minced

Preparations

Cook noodles in large pot of boiling salted water until tender but still firm to bite. Drain, do not rinse and toss while hot with half the dressing.

Add vegetables and quarter loaf to the noodles, add more dressing to taste and toss gently to evenly coat.

Serve chilled.
