2 cups cooked brown rice

FieldĀ  Roast Mexican Chipotle Sausage, sliced

3 tbsp olive oil, divided

1 can pinto beans, drained

1/2 tbsp homemade or store-bought taco seasoning

2 cups spinach

4 cloves garlic

1 avocado

Pickled red onions


Please add how many for the sausages.


In a large skillet over medium heat add in olive oil along with sausage. Cookuntil sausage begins to brown. Remove from heat and set aside.


In the same skillet add in the beans along with another tbsp of olive oil and the taco seasoning. Cook, stirring often, until beans are warmed through and seasoning is absorbed. Remove from skillet and set aside.


In the same skillet add in remaining olive oil along with garlic and spinach and stir until spinach is wilted.


Divide rice into two bowls and top with beans, sausage, greens, avocado, cilantro and pickled onions. Enjoy!
