2 Field Roast burgers
1 cups Caramelized fennel (recipe below)
2 Whole grain buns
1 TBS Vegan mayo
1 TBS Ketchup
1 cup Shredded romaine lettuce

Caramelized Fennel:
1 Large fennel bulb, trimmed and finely sliced
1 TBS Coconut oil
Freshly ground black pepper and sea salt, to taste
1/2 Lemon, juiced


 Heat oil in a large saute pan over medium heat.

Add coconut oil along with fennel slices.  Toss to coat.  Add pepper and salt.

Cook for 15-20 minutes, stirring every 2-3 minutes throughout.  Lastly, add lemon juice.  Toss.  Fennel should be golden brown and will have sweetened up throughout the cooking process.

Prepare burgers by heating them on a small saute pan sprayed with non-stick cooking spray over medium heat.  Warm for 3-5 minutes and flip.  If you prefer the burger to be a bit crispy on the outside, add a touch of coconut oil and cook for an additional 4-5 minutes per side.

Lightly toast the buns and spread with vegan mayo and ketchup.  Place an even amount of romaine lettuce on the bottom bun, add the burger next, then an even amount of Caramelized Fennel, topped with the bun or any additional burger fixin's you like!
