This vegan stuffing is the perfect complement for a holiday feast.
2 TBS Olive oil
½ cup Onion, small diced
½ cup Celery small diced
½ cup Carrot, small diced
½ cup Mushroom, small diced
1 loaf Artisan crusty bread, cubed
2 cups Vegetable broth
¼ cup Dry white wine
2 T Earth Balance or vegan butter
½ teaspoon Dried sage
½ teaspoon Dried thyme
½ teaspoon Dried savory
1 pinch Dried rosemary
4 Field Roast Smoked Apple Sage Sausages, small diced
Black pepper, freshly ground
Heat oil in large skillet and sauté onion, celery, carrot, and mushroom until softened, adding a little broth if necessary to keep from sticking.
Remove pan from heat and add all remaining ingredients. Mixture should be moist.
Put stuffing mixture in greased casserole dish. Brush top with more olive oil or melted Earth Balance.
Cover with foil and bake at 350°F for approximately 45 minutes.
