Chicago-Style Hot Dog Fried Rice

Ingredients
1 tbsp. peanut oil
2 cups pre-cooked rice (recipe below)
1 link Field Roast Classic Smoked Plant-Based Frankfurters, sliced into coins
½ cup celery, small diced
cup small onion, diced
2 cloves garlic, minced
½ tsp. sambal oelek or your favorite chili garlic sambal
¼ cup green onion, sliced, white and green parts separated
1 tsp. soy sauce
1 tsp. toasted sesame oil
1 tsp. sugar
Pinch of ground white pepper
Salt and sugar to taste
Garnish
½ cup small tomatoes, diced
4 tbsp. Green Relish
10 each Sport Peppers
1 tbsp. Poppy Seeds
Celery Salt
Yellow Mustard to taste
Preparations
Heat 1 tablespoon of oil over high heat in a wok. Just as the oil begins to smoke, add the celery, onions, and sambal. Stir-fry and cook for approximately 30 seconds. Add the garlic, and green onion whites and stir-fry for another 30 seconds. Sprinkle rice into the wok so that the grains stay as individual as possible. Stir to incorporate, then let sit for approximately 20 seconds before stirring again. Repeat this process until the rice is hot and moist, about 3 minutes. Add the green onion greens, the sliced frankfurters, and season with the soy, sesame oil, sugar, and white pepper. Stir to incorporate all of the ingredients. Taste and adjust the seasoning as needed. To finish, garnish with green relish, sport peppers, poppy seeds, celery salt and yellow mustard and serve immediately.
