Ingredients
2 Signature Stadium Dogs
2 Hot Dog Buns
¼ cup minced White Onion
1tbsp Mole Paste
¼ cup Pinto Beans
2 tbsp Safflower Oil
1 pack of Field Roast Mexican Chipotle Sausage crumbled
½ cup Vegetable Stock
1 tsp Chili Powder
½ tsp Cumin
1 tsp garlic
1 tsp Tomato Paste
½ cup Field Roast Tomato Cayenne Cheese shredded
¼ cup minced Red Onion
Preparations
Preheat oven to 350 degrees.
On a sheet pan, arrange the shredded Tomato Cayenne Chao in 3 inch circles. Bake for 10-15 mins until the cheese is crispy. Allow to cool on the pan.
In a small saucepan over medium heat, add half the oil, white onion, and garlic. Cook for 3-4 mins, stirring occasionally to prevent garlic from burning. Add the Mexican Chipotle Sausage, cumin chili powder, and mole paste. Cook mixture for another 5-7 mins, stirring occasionally. Add the tomato paste, beans, and stock. Simmer for 10-15 mins, then reduce heat while you prepare the Stadium Dogs.
In a skillet over medium heat, add the remaining oil and the Stadium Dogs. Cook for 4-5 mins. Turning regularly, until heated throughout. Remove the dogs from the pan and place in buns. Top with chili sauce, chopped red onion and Chao tuille.
