Portuguese Stewed Fava Beans

Cozy up to this bold and spicy stew, perfect all season long. Fava beans are simmered with onion, red pepper, garlic, smoked paprika and mouth-watering Spicy Mexican Chipotle Plant-Based Sausages. It’s a traditional Portuguese dish with a spicy Mexican plant-based twist.
Ingredients
1/2 cup extra virgin olive oil
1 onion, julienned
2 red peppers, julienne
2 tbsp. garlic, minced
1 oz. sherry vinegar
1 oz. cane vinegar
1 oz. tomato paste
2 cups water
1 tbsp. salt
1 tsp. smoked paprika
1 tsp. ground black pepper
2 tbsp. sugar
2 lbs. fava beans, fresh or frozen, shell on
2 Field Roast Spicy Mexican Chipotle Plant-Based Sausages, cut into ¼ inch coins
Preparations
Heat oil in a medium sauce pot on medium-high heat. Add onions and sweat until translucent, approximately 6-8 minutes. Add red pepper and garlic and cook until peppers have softened, and garlic is fragrant and just turning brown. At this point, add the vinegars to deglaze the bottom of the pan and add remaining ingredients, excluding fava beans. Bring to a boil and let simmer for 2 minutes.
Add fava beans to the pot. Bring up to simmer, stirring to ensure its evenly cooked. Let it sit for 2 minutes. When fava beans are tender, add Spicy Mexican Chipotle Plant-Based Sausages, return to simmer, and garnish with cilantro. Serve with crusty bread for dunking.
