Roasted Brussels Sprouts with Mexican Chipotle Sausage

ABOUT THE FLAVOR ORIGIN
This spicy take on roasted brussel sprouts with apples and Mexican Chipotle Sausage, brings some serious bite to a traditional side dish.
2 lbs brussels sprouts, cleaned and cut in half
¼ cup safflower oil
2 tsp sea salt
1 tsp black pepper
1 honeycrisp apple (or similar), cored and cut into thin slices
1 pkg. Spicy Mexican Chipotle Plant-Based Sausages, crumbled
¼ cup olive oil
¼ cup apple cider vinegar
1 Tbsp dijon mustard
1 Tbsp maple syrup
2 tsp fresh tarragon, stems removed and roughly chopped
Preheat oven to 475 degrees.
Toss brussels sprouts in safflower oil, salt and pepper. Lay out on sheet pan, and roast in oven for about 10 minutes, or until edges are golden and crispy. Add the apples and crumbled sausage to the pan and return to the oven for an additional 5 minutes. Transfer to a bowl.
Combine remaining ingredients, stir until well blended. Pour over brussels sprouts mixture and toss to combine.
