Sweet Chili Stir-Fry with Red Peppers, Peanuts and Jasmine Rice

ABOUT THE FLAVOR ORIGIN
A stir-fry is a great weeknight option that comes together quickly once all the vegetables have been prepped and the rice has been cooked. The Thai sweet chili sauce with flavors of garlic, rice wine vinegar and red chili is perfect with the juicy apple sausages, sweet red pepper and pineapple. Finish the bowls with green onion and the satisfying crunch of toasted peanuts.
Ingredients
2 tbsp. vegetable oil
1 clove garlic, minced
½ cup red onion, sliced into 1/8” wedges
½ cup carrots, peeled and thinly sliced in coins (about 2)
1 red pepper, thinly sliced
½ cup snow peas, strings removed, halved
½ cup fresh pineapple, thin slices cut 1”x 2”
4 Field Roast Spicy Mexican Chipotle Sausages, sliced diagonally into 8 to 10 slices
½ cup Thai sweet chili sauce
4 cups jasmine rice, cooked and seasoned
¼ cup green onions, sliced
¼ cup roasted peanuts, chopped
Preparations
Heat the vegetable oil in a large skillet over medium-high heat. Add the garlic and red onion and sauté, stirring for 1 minute until fragrant and sizzling. Add the carrots and red peppers and sauté for 2 minutes, tossing occasionally. Add the snow peas and fresh pineapple and sauté for 30 seconds, tossing to combine.
Turn the heat down to medium and add the slices of Field Roast Spicy Mexican Chipotle Sausages, the sweet chili sauce and 2 Tbsp of water. Cook, stirring frequently for 3 to 4 minutes until everything is hot and saucy.
To serve, divide the cooked and seasoned jasmine rice between four large shallow bowls. Top with the sweet chili stir-fry. Garnish each bowl with slices of green onion and chopped peanuts. Enjoy while hot.
